Had another cabbage leaf taco session tonight, basically a redo of last Sunday night. I'm really liking using the country ribs, they are quite tasty little morsels :) Also discovered that the key to perfectly caramelized onions is the cast iron skillet... it's quickly becoming a new best friend.
We have a crazy week coming up so it will take a little pre-planning and resolve to make it though Paleo... I think I can!

8.18.12. Saturday: Company coming over
Had friends over for dinner tonight and served:
-grilled chicken
-garlic sautéed kale
-caprese toss

08.17.12. Friday: Moroccan Meatballs and Spiced Up Tomato Sauce
Tonight for dinner I made the Moroccan spiced meatballs from PaleoMG- totally awesome
Some changes I made:
-didn't have anise powder so I used seed; worked really well and I will continue this
-for the sauce I didn't have coriander or smoked paprika so I used a little chipotle powder; don't know what the original was supposed to taste like, but this was awesome
-used a can of garlic roasted tomato sauce instead of the tomatoes
In the future:
-I might play around with adding ground almond meal and an egg to make them more like a traditional meatball texture... As is they are a bit tough but very tasty.
I like how these were really a good traditional comfort food substitute. A hit that I will definitely make again!!

8.16.12. Thursday: Asian Egg and Veggie Fritters
Tonight for dinner I'm making little ham and cabbage egg cakes that are kind of a cross between the Well-Fed, egg foo young and the NomNom Paleo, egg foo young panckaes. I like that the NomNom recipe includes a little coconut flour and plan to do the same. Also thinking of whipping up a dipping sauce and doing a veg (Asian spin on massaged kale maybe?)
***These were very good, and aside from the general pain in the ass nature of flipping pancakes these were pretty easy, too. I made a quick peanut dipping sauce and served them with an Asian inspired kale salad (massaged w/rice vinegar, sesame oil, soy an then tossed with sesame seeds, ginger and garlic powder). By the time hubby got home they were room temp... While good, they really were better hot; maybe these will have to be a weekend thing
So I see that the pics are out of order.... something to work on next time I guess!

Wheat/Grain Free menu's so far... close to Paleo as possible
I'm trying to be good about chronicling what we are eating for dinner so that I have something to refer back to when I'm at a loss as what to put on the table.... from this point on I'll try to update daily, but here's the week's roundup so far

*Meat and veggie stuffed mini peppers (pork sausage, spinach, carrots, onion, egg)
*Pork Wraps with leftover country ribs (cabbage leaves, sauteed mushrooms) and lemon garlic aioli
*Best chicken you've ever had, Moroccan dipping sauce and creamy cucumber salad
The verdict... all these were excellent. The Pork tacos with onions, the garlic aioli and the whole chicken meal were all standouts

Coconut Oil instead of Butter/EVOO... Here we go!
I'm sauteing mushrooms for tonight's dinner and am going to go with the more healthful coconut oil instead of my normal choice of butter/evoo. This is my first rodeo with coconut oil so I am anxiously awaiting the results. It'll be interesting to see if I can pull this over on the hubby since he's a self proclaimed hater of coconut.

***And the verdict is- meh, it's ok. It definitely had a coconut flair. Hubby didn't catch on and it strangely worked with our dish, so that's a win.

What's the plan?
I've come to the conclusion that I have to make changes... I have to loose weight... I have to be healthier. So, what's the plan to achieve this?
Recently I've been devouring books, blogs and the like about living a "Paleo" lifestyle. I've also recently finished a book about cutting wheat and grains from our diets in an effort to achieve health. From these sources I've gained a fair amount of "food for thought". Fats are good! Carbs are bad (sort of)! Dairy, meh? Veggies absolutely! Fruits, not sure?
I think my plan at this point is to strive for a combo implementation of these things. I am going to attempt to:
*Eliminate all grains from my diet
*Eat LOTS of veggies
*Limit my caffeine to a little coffee in the mornings
*Eat a very low amount of carbohydrates and the carbs I do eat need to come from whole, "natural" foods
*Cut sugar and limit sugar substitutes
*Limit dairy
*Cut legumes
*Up my meat consumption and try to buy pastured meats when I can
I would also really like to start incorporating some yoga into my schedule a few times a week. I've been stiff and sore and think this might really help.
So with these lofty goals I set out... I hope to keep you updated as to my progress along the way

Reality check- Plan to achieve health
I just got back from vacation, or should I say I just returned from the excesses of vacation. We had a wonderful time! Eating, Drinking, Eating, Eating, Drinking.... that seems to sum up the rotation of my weeks away. Being around family for an extended time also enabled me to relax and have some soul-searching downtime. During my downtime I realized I really wanted to do something to start living more healthfully and to start making permanent changes to positively impact my life and ultimately my family.
The ugly truth is that I am fat... not just chubby, not voluptuous, but fat. F-A-T. I've hidden behind the, "big bones", I've hidden behind my "Zaftig" heritage, I've hidden behind my personality and humor, you name it and I've made excuses and forgivenesses for how I look. While hiding behind all of that I've continued to eat unhealthfully, I've not really willingly done any physical activity and I've ballooned to my highest weight ever. I weigh more now than when I delivered my son nearly 5 years ago.
Miraculously, I've gotten to this weight and have suffered very little on the health impact front.... I'm not sure how this has happened, but I know in my heart if I continue on with the out of control eating and sedentary lifestyle that it will catch up with me.
So, I've decided to do something about it. I'm starting this blog as a way to hold myself accountable for change. I'm huge on starting something and not following through. Actually, if I had to sum up my resolve it would sum to zero. But hopefully this time will be different.
Here's to healthful weight-loss, here's to becoming active... Here's to Here it goes
